How are fermions, like electrons, described by m theory? Are they closed strings like gravitons, or are they open strings attached to a D2/M2, D4, or M5 branes?

To my knowledge m-theory does not contain strings, so i think you should look for the answer in string theory. Zwiebach contains a very nice introduction to phenomenology in string theory :)
