I have an electric smoker with a 1500 watt heat element I would like to be able to control the heat level inexpensively. Could I use a router speed control box to just dial down the power level, would I need a 15 or 20 amp model. THANKS

Yes, because the heating element is resistive. Do not exceed the watt/amp rating of the speed control. 15 A rating should be adequate.
