I want to dehydrate a fruit, let say apple, how can I calculate the heat required to dehydrate its water content by 90%.

What data would I need to solve such problem, i.e Relative humidity, temperature etc.

I don't know that you actually need any heat at all. As long as the humidity is low, it should happen. I recently found a perfectly dehydrated chunk of apple under my couch. (I didn't try eating it, because the cat was playing with it, but it looked perfect.)
